For All My Avocado Lovers: AvoChickMango Salad

I have had several requests recently for recipes containing avocado (you know who you are, and your continued support of my blogging is appreciated!!). In an attempt to appease that request, a recipe just for you.

While on a road trip to play UCLA, one of our team meals included this wonderful combination of sweet and savory. Who would have thought avocado and mango is a match made in heaven?

WARNING: if you decide to make this (which you should) there will be no leftovers. It is that good.

AvoChickMango Salad. Yum. Yum. YUM.

AvoChickMango Salad

2-3 Cooked, cubed chicken breast

2 Mangoes, peeled, seeded, cubed

2 Avocados, peeled, pitted, cubed

1/3 cup lime juice

1 Tbsp cilantro, chopped

Salt, to taste

1. Combine all ingredients and chill before serving (at least an hour).

2. Serve over lettuce or alone.

**you can add a little onion if you would like a little extra zip. The onion-free edition is my sister-in-law-friendly version.

To take this delicious salad on the go I may try it in a whole wheat pita pocket. I am definitely making it again in the near future. Give it a try. I promise you won’t regret it.
